Vanilla-Nutmeg French Toast with Peanut Butter Syrup

  • 6 slices of bread (using older bread works best)
  • 4 eggs (or equivalent of egg beaters)
  • ½ cup Fat Free ½ & ½
  • ½ teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
    (Salt to taste. ~ ½ teaspoon)
    2 T Butter or whatever butter substitute you prefer (I use Smart Balance sticks)


  1. Beat the eggs. Add the FF ½ & ½, nutmeg, vanilla extract and salt. Mix together.
  2. Soak the bread slices in the mixture.
  3. Fry the soaked bread on one side until golden brown in butter, then turn and fry until the other side is golden brown. 
TIP: To get an awesome thick layered crust on each side, I spoon on some of the egg mixture and then reflip to cook thus creating a thicker egg crust on each side.
Peanut Butter Syrup:
¼* cup of your preferred syrup like pure maple syrup or normal pancake syrup (I use a sugar free one)
1 heaping Tablespoon peanut butter
*use ½ cup if you prefer a thinner syrup


Warm maple syrup in microwave until warmed, about 30 seconds then stir in peanut butter until smooth. Can top with sliced bananas, coconut, or whatever you like!
